Prepare the pudding/shake according to package instructions. Mix with parsley and lemon zest in a large bowl. Add the apple, celery and raisins to bowl and then toss with the dressing. Cover and refrigerate if not being served immediately. When ready to serve, toss the walnuts into the salad. Place the salad on the lettuce and serve.
