Sweet Potato and Fruit Fritter

Combine ingredients in a mixing bowl. Flatten batter into 5 patties. Turn stovetop to medium heat, coat a medium size griddle or frying pan with cooking spray, cook the patties until both sides are light brown and crisp. Top with artificial sweetener or sugar free maple syrup if desired.
